The Cachaça

Saliníssima cherishes the cachaça culture and it is one of the traditional and authentic cachaças from Salinas. Saliníssima is an alternative to those who appreciate simplicity, roughness and tradition in balance with modern life and with the best things in life.

It combines the features of genuine top-notch artisanal Cachaça. The aging process, which occurs in balsam barrels, lends it a woody and smooth taste. Its yellowish color and powerful body reflect our carefulness in upholding original artisanal cachaça-making techniques from the state of Minas Gerais.

The Matrona Farm

Saliníssima is made at the Matrona Farm, in the district of Salinas, Minas Gerais State.

Originally, the farm was bought in 1955 by Olímpio Mendes, who grew sugarcane there and used it to make cachaça and rapadura -a typically Brazilian sweet bar made from boiled sugarcane juice. The cachaça was hand-bottled and sold at Mr. Mendes’ own house to farm employees, neighbors and friends. The rapadura, on the other hand, was sold in town on Saturdays, after a long journey on oxcart.

In the cachaça-making process, Alfredo Mendes de Oliveira, Mr. Mendes’ son, was in charge of milling the sugarcane and transporting it on oxcart, whereas his father worked on fermentation and pot mill distillation, which was done at the mill in wooden dornas (container where fermentation occurs).

In 1996, Mr. Olímpio Mendes moved into town due to health issues and his son Alfredo Mendes took over the cachaça making. Upon the death of Mr. Olímpio Mendes, his son, Alfredo, and grandson, Lucas Mendes, took full control of the Farm and continued the tradition of making both artisanal cachaça and rapadura. In 2003, construction of a new mill started, with better structure and new machinery, but preserving the essence of the cachaça-making process. Nowadays, still owned by Mr. Olímpio’s family, the Matrona Farm remains one of the most important cachaça makers in the district of Salinas.
